Salted caramel brownies = heaven.
For real.
When I had my wisdom teeth pulled a few weeks ago, my diet was very limited. Soft foods only. As much as I love chocolate pudding (and I truly do love it), I started dreaming of the time when I could eat real food. Hamburgers and french fries. Roast beef. Pizza rolls. And brownies.
And when I opened my pantry and saw five leftover chocolate bars from our s’mores party, an idea formed. Brownies with chocolate bars and salted caramel in the middle.
Since I am not one to let inspiration pass me by, I made these lovely brownies. And I got to eat a pinch. That’s it. A smidgeon. Turns out, your not supposed to have caramel after your wisdom teeth are removed. Life is so unfair when you can’t eat.
So with complete envy, I watched my family devour these brownies. And I made a vow that I would make these brownies again asap. And as soon as my mouth recovered, I made these delightful brownies again.
My taste buds were in heaven. Rich chocolate. Salted caramel. Complete decadence. Ambrosia in a pan.
I’m sure you’ve noticed that salted caramel is a thing right now. And for good reason. The whole sweet with a pinch of savory thing is so good. I can’t seem to get enough of it.
For this recipe, I used Maldon Sea Salt Flakes (affiliate link) that I picked up at my local grocery store. Fleur de sel salt would work great too. And let’s be honest, cooking with salt with a fancy name like that makes a girl feel like a kitchen rock star. And putting that fancy-named salt in this brownie recipe will convince everyone around that you are indeed, a culinary rock star.
Never mind that this recipe is so easy and only takes minutes to put together.
The thing that makes this recipe so easy is that you start with a brownie mix. A family size brownie mix, to be exact. You need all that extra goodness so you have enough spread it over and under all the salted caramel goodness.
Brownie mixes are, in my humble opinion, one of the greatest inventions of the 21st century. That and the polio vaccine. And airplanes. And the internet. Okay, so maybe brownie mixes are not in the exact same category as life-changing technology, but it’s pretty close.
I mean, what’s not love about a chewy, fudgy, and totally chocolaty dessert that comes together with just a few simple ingredients and doesn’t even require you get out your electric mixer! Hello, wonderful.
I hope you get a chance to make these easy and totally scrumptious salted caramel brownies. They may just make your day. Or your weekend.
Ingredients
- 1 Family Size (18.3 oz) brownie mix (I use Duncan Hines)
- 2 eggs
- 1/2 cup oil
- 1/4 cup water
- 5 (1.55 oz) milk chocolate bars (i.e. Hershey bars)
- 1 bag (11 oz) caramels
- 1 tablespoon cream
- 1/2 teaspoon sea salt flakes
Instructions
- Preheat oven to 350 degrees.
- In a large mixing bowl, whisk together the brownie mix, eggs, oil, and water.
- Spread half of the brownie mixture into a greased 13x9 baking pan. Try to get the brownie spread as evenly as possible over the whole pan.
- Put the chocolate bars (unwrapped) over the brownie mixture in the 13x9 baking pan.
- Put the unwrapped caramels and cream in a microwave safe bowl. Melt the caramels in the microwave. (Put it in the microwave for 1 minute, take it out and stir. if needed, continue this process, cooking and stirring every 30 seconds, until caramels are melted.)
- Pour the melted caramel over the candy bars and brownie mixture in the 13x9 baking dish.
- Sprinkle the salt flakes evenly over the melted caramel.
- Put the remaining brownie mix over the salted caramel. Using a flat spatula or the back of a spoon, gently spread the brownie mix over the caramel.
- Bake at 350 degrees for 25-30 minutes.
- Let cool. Cut and enjoy. (Tip: if you use a plastic knife to cut your brownies, you will get a cleaner cut and the brownies won't stick as much to the plastic knife.)
