Let’s talk about fudge.

My mom has been making this fudge recipe for as long as I can remember. When I was young, she made it year-round. I was never shocked when I came home from school in April and saw fudge in the freezer.

In fact, she has made it so many times that she has the recipe memorized and she can tell when it’s done just by looking at it. That, my friends,  is the sign of a true fudge connoisseur.

I know that some of you like the specialty fudge, like rocky road, peanut butter, or white chocolate. And I agree that there is a real place for those amazing fudges, but I think everyone needs an awesome, basic chocolate recipe in their arsenal.

This recipe is not complicated but it is so delicious! In fact, I almost hesitate making it because I know that I will not be able to stop eating it.

And that was certainly the case with this last batch. I took a few pictures, took a few bites, took a few more pictures, tasted some more fudge. When the pictures were done, I actually wondered who had eaten so much of the fudge. Then I remembered that I was the only in the kitchen. Yeah, this fudge is that good.

When making this recipe, you will start by boiling the butter, sugar, and evaporated milk. You will want this mixture to come to the soft-ball stage before adding the chocolate chips, marshmallow creme, and vanilla.

You can tell when it is ready by putting some of the sugar mixture in some ice cold water. If the mixture holds its shape, it is done. You will then take it off the heat, and add the other good stuff.

Mom’s Easy Homemade Fudge

Ingredients

  • 1/2 cup butter (1 stick)
  • 1 can carnation evaporated milk
  • 2 cups granulated sugar
  • 2 cups semi-sweet chocolate chips (1 bag)
  • 1 (7 oz) container marshmallow creme
  • 1 teaspoon vanilla
  • 1 cup chopped nuts (optional)

Instructions

  1. In a large saucepan, combine the butter, evaporated milk, and sugar. Let this mixture come to a boil over medium heat.
  2. While the mixture is boiling, stir it every minute or so to prevent burning. Let the sugar mixture continue to boil until the fudge reaches the soft-boil stage. (You can tell when you are at this stage by putting some of the sugar mixture in a cup of ice water, if it holds its shape than it's done. It takes about 20 minutes to get to this stage.)
  3. Take the mixture off the heat, and stir in the chocolate chips, marshmallow creme, and vanilla. Stir until the mixture is smooth.
  4. Add the nuts, if desired.
  5. Pour the mixture into a lightly greased 9x12 pan and let it sit for several hours to set, or put it in the fridge or freezer for faster setting time.
